How we grow fruit?
- Use of Alt’Carpo protection nets, a new technique for fighting codling moth, one of the most harmful insects for pome fruit.
- Micro-drip irrigation for a sustainable use of water.
- Grass under orchards.
- Hoeing of soil.
- Harvesting of the fruit by hand according to the degree of ripeness.
- Organic fertilisation.
How do we produce our compotes?
- Low temperature cooking at 50-60 °C to preserve the colours and organoleptic properties of the fruit.
- Use of the vacuum method to extract the water contained in the fruit and thus concentrate the pulp in a natural and simple way, without the use of pectin or other thickeners.
- Careful selection and quality control at every stage of production, in order to use only the best fruit with the right degree of ripeness.
- Use of simple and special recipes, created by our family over years of experience.
- Careful selection of fruit varieties according to the type of processing.
- Low addition of sugars, to further enhance the taste of the fruit and rand allow the palate to get used to the right balance of sweetness.
